Creole Sauce

Ingredients

  • 2 Tbs. butter
  • 1/4 cup chopped onion
  • 1 minced clove garlic
  • 6 minced green olives
  • 1 1/2 cups canned tomatoes
  • 1/2 cup chopped green pepper, with seeds and membranes removed
  • 1/2 bay leaf
  • a pinch thyme
  • 1 tsp. chopped parsley
  • 1 tsp. white or brown sugar
  • 1/3 tsp. salt
  • a few grains cayenne
  • 1 Tbs. dry sherry, optional
  • 1/4 cup chile sauce, optional
  • 2 Tbs. diced ham, optional
  • 1/2 cup sliced mushrooms, optional

Directions

Melt butter over low heat. Add chopped onions, minced garlic, and minced green olives and cook covered about 2 minutes. Add rest of ingredients and cook until the sauce is thick, about 50 minutes.
