Ingredients
- 2 Tbs. butter
- 1/4 cup chopped onion
- 1 minced clove garlic
- 6 minced green olives
- 1 1/2 cups canned tomatoes
- 1/2 cup chopped green pepper, with seeds and membranes removed
- 1/2 bay leaf
- a pinch thyme
- 1 tsp. chopped parsley
- 1 tsp. white or brown sugar
- 1/3 tsp. salt
- a few grains cayenne
- 1 Tbs. dry sherry, optional
- 1/4 cup chile sauce, optional
- 2 Tbs. diced ham, optional
- 1/2 cup sliced mushrooms, optional
Directions
Melt butter over low heat. Add chopped onions, minced garlic, and minced green olives and cook covered about 2 minutes. Add rest of ingredients and cook until the sauce is thick, about 50 minutes.
