Ingredients
- 4 whole chicken breasts, boned & skinned
- margarine or oil
- 1/2 cup honey
- 3 limes – juice only
- 1 minced garlic clove
- 1/4 tsp ground ginger
- 4 Tbs. chicken stock
- 2 scallions sliced
Directions
Grill chicken breasts lightly coated with margarine until three fourths done. Turn and continue cooking while preparing sauce. In saucepan heat honey, lime, garlic, ginger and stock. Cook until golden and thickened. Add grilled chicken and sliced scallions. Cook 2-3 additional minutes on each side. Serve immediately. Serves 4.
