Steak and Kidney Pie 3


  • 3 slices bacon cut into large dice
  • 1 1/2 pound chuck steak, well trimmed, cut into ½-inch dice
  • 1 1/2 cups basic brown soup stock or canned beef broth
  • 1/2 cup Madeira wine
  • 2 cloves garlic crushed
  • 2 veal or lamb kidneys, cleaned of inner fat and cut into ½-inch cubes
  • 2 tablespoons chopped yellow onions
  • 3 tablespoons chopped parsley
  • 1 teaspoon whole thyme leaves or to taste
  • 1/4- 1/2 teaspoon whole sage leaves, rubbed or to taste
  • Salt and Black pepper to taste (I use lots of black pepper in this dish.)
  • 3 tablespoons each butter and flour cooked together to form a roux
  • 1 batch of basic easy crust


Heat a heavy black-iron kettle or Dutch oven and lightly brown the bacon. Turn up the heat and brown the beef cubes well. Add enough beef stock to barely cover and put a lid on the pot. Simmer the meat until tender, about ½ hour.

Add the remaining ingredients except the roux. Continue cooking for another 15 minutes. Thicken the sauce with the roux.

Roll out the crust and make one large pot pie or 4 small individual pot pies.
